Kūmara Boats

Ingredients 

  • 4 medium kūmara
  • 1 can of five bean mix (420g), drained
  • 1 cup of grated cheese
  • 1 spring onion sliced
  • Salt and pepper to taste

Method

Preheat oven to 180 degrees.
Using a fork, prick the kūmara a few times. Place onto a tray, rub with a little oil (1-2 tspn).                                           
Place into the oven for 1 hour 30 minutes (or until cooked through).     
Remove from oven and allow to cool.
Scoop out the inside of the kūmara without tearing the rest of the skin around the kūmara, and place kūmara filling into a bowl.       
Add the bean mix, half the cheese and spring onions. Season with salt and pepper.
Return the filling into the kūmara, piling it up, and sprinkle over the remaining cheese.                           
Bake for a further 20 minutes until golden brown.
